Bacon Potato Balls

- 3 russets potatoes
- 1 egg, lightly beaten
- 1 cup shredded parmesan cheese
- 1/4 cup chopped green onions
- 2 cup real bacon bits
- 1 bag of croutons
- Vegetable Oil for frying
- Get potatoes and boil until soft.
- Remove skin and begin mashing the potatoes.
- In a large bowl, stir in the egg, cheese, onions and bacon bits.
- Shape into 1-in. balls; roll in croutons. Let stand for 20 minutes.
- In a skillet, heat 1 in. of oil to 375°. Fry potato balls, a few at a time, for 2-1/2 to 3 minutes or until golden brown.
- Take out potato balls carefully
- Enjoy!
- Yield: 6 servings.
